  • 2 cups fresh spinach
  • 4 oz spicy chorizo, diced
  • 6 large eggs

  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Add diced chorizo and chopped onion; sauté until golden brown.
  3. Stir in fresh spinach and chickpeas until the spinach wilts (about 2-3 minutes).
