Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ cup granulated sugar
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup whole milk (or almond/oat milk)
  • 2 large eggs
  • ⅓ cup melted butter
  • ½ cup brown sugar (for topping)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, sugar, cinnamon, and salt.
  3. In another bowl, mix the milk, melted butter, eggs, and vanilla until smooth.
  4. Combine the wet ingredients with the dry ingredients until just mixed—do not overmix.
