  • 1 medium onion, diced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ¼ cup fresh cilantro or basil, chopped (for garnish)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients: chop chicken into bite-sized pieces.
  2. In a large skillet over medium heat, add olive oil and sauté diced onions until translucent. Add minced garlic and grated ginger; cook for an additional minute.
  3. Add chicken pieces to the skillet, season with salt and pepper, and cook until browned on all sides (5-7 minutes).
