Ingredients

  • Espresso or strong brewed coffee
  • Mascarpone cheese
  • Granulated sugar
  • Ladyfinger cookies
  • Unsweetened cocoa powder
  • Vanilla extract
  • Heavy cream

Instructions

  1. Brew espresso or strong coffee and let it cool slightly.
  2. In a mixing bowl, combine mascarpone cheese and sugar; beat until smooth. Gradually fold in whipped heavy cream until soft peaks form.
  3. Quickly dip ladyfingers into cooled coffee and layer half in a dish. Spread with half of the mascarpone mixture.
  4. Repeat with remaining ladyfingers and top with the remaining mascarpone mixture. Smooth the top.
  5. Dust cocoa powder over the top using a fine sieve.
  6. Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
