  • 4 cups fresh kale, chopped
  • 1 cup dried cranberries
  • 1 cup shredded carrots
  • 1 cup red cabbage, shredded
  • 1/2 cup sunflower seeds (unsalted)
  • 1/2 cup Greek yogurt
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse and dry the kale thoroughly. Remove tough stems and chop into bite-sized pieces.
  2. Shred the carrots and red cabbage using a box grater or food processor.
  3. In a separate bowl, whisk together Greek yogurt, apple cider vinegar, honey/maple syrup, salt, and pepper until smooth.
  4. In a large bowl, combine the kale, carrots, red cabbage, and cranberries. Pour the dressing over and toss gently until fully coated.
  5. Cover and refrigerate for about 30 minutes to allow flavors to meld. Just before serving, sprinkle sunflower seeds on top.
