  • 1 cup dried cranberries (150g)
  • ½ cup pecans, roughly chopped (60g)
  • 2 sprigs fresh rosemary, chopped
  • ¼ cup honey (85g)
  • ½ cup chicken broth (120ml)
  • 2 tbsp olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Season chicken breasts on both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and rosemary; sauté until fragrant (about 1 minute).
  3. Pour in chicken broth and honey, then add cranberries. Stir until combined.
  4. Place seasoned chicken in the skillet and spoon sauce over it. Cook for about 5 minutes on each side until golden brown.
  5. Transfer everything to an oven-safe dish and pour remaining sauce over the chicken. Bake for 25-30 minutes until cooked through.
