  • 9 oven-ready lasagna noodles
  • 1 cup ricotta cheese (whole milk)
  • 2 cups fresh spinach (chopped)
  • 1 cup mushrooms (sliced, cremini or button)
  • 1 medium zucchini (thinly sliced)
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese (whole milk)
  • ½ cup freshly grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté chopped onions in a large skillet over medium heat until translucent, then add mushrooms and zucchini until tender.
  3. In a bowl, mix ricotta cheese, spinach, Italian seasoning, salt, and pepper until creamy.
  4. Spread a layer of marinara sauce in a baking dish. Layer with three noodles, half of the cheese mixture, half of the sautéed vegetables, and some mozzarella.
  5. Repeat layering with remaining ingredients, finishing with noodles topped with marinara and mozzarella.
  6. Cover with foil and bake for 25 minutes; then remove foil and bake for another 15 minutes until golden brown.
  7. Let cool slightly before serving.
