Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 1 cup Greek yogurt (full-fat)
- 1 medium cucumber (grated)
- 2 tbsp fresh dill (chopped)
- 2 tbsp fresh mint (chopped)
- 2 tbsp lemon juice
- 1 tsp garlic powder
- Salt and pepper to taste
- 3 cups low-sodium chicken broth
Instructions
- Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- In a bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, mint, garlic powder, salt, and pepper until smooth.
- Place chicken breasts in the baking dish and surround them with long-grain rice. Spread the tzatziki mixture evenly over the top.
- Pour chicken broth into the dish until it just covers the rice.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
