  • 2 sheets puff pastry (thawed)
  • 1 egg (for egg wash)

Instructions

  1. In a skillet over medium heat, add a splash of oil and sauté the diced onion and bell pepper for about 5 minutes until soft. Stir in the minced garlic for an additional minute.
  2. Add the ground beef, breaking it apart as it cooks for 6-8 minutes until browned. Season with cumin, paprika, salt, and pepper.

  4. Place about 2 tablespoons of filling in the center of each circle. Fold into a half-moon shape and seal edges with fingers or fork tines.
  5. Preheat oven to 400°F (200°C) and brush empanadas with egg wash. Bake for 20-25 minutes until golden brown.
