Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree with sugar and eggs until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; pour batter onto the prepared baking sheet.
  5. Bake for about 15 minutes or until the cake springs back when lightly touched.
  6. Cool on a wire rack; once cooled, dust a clean kitchen towel with powdered sugar and flip the cake onto it.
  7. Roll the cake tightly using the towel; let it cool completely.
  8. Beat cream cheese, powdered sugar, and vanilla until smooth; unroll the cake and spread filling evenly over it.
  9. Carefully re-roll without the towel; wrap in plastic wrap and refrigerate for at least an hour before slicing.
