  • 4 boneless skinless chicken thighs
  • 5 garlic cloves, minced
  • 8 oz cremini mushrooms, sliced
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper (to taste)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Pat the chicken thighs dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken thighs and sear for about 6 minutes on each side until golden brown and cooked through (internal temperature of 165°F). Remove from skillet.
  3. In the same skillet, add minced garlic and sliced mushrooms; sauté for about 5 minutes until tender.
  4. Pour in chicken broth and soy sauce, scraping up any bits from the bottom of the pan. Bring to a simmer.
  5. Return the chicken to the skillet, spooning some sauce over them. Simmer for another 5 minutes.
  6. Garnish with chopped parsley before serving.
