  • 8 oz fettuccine pasta
  • 1 lb sirloin steak, thinly sliced
  • 4 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Season the steak with salt and pepper, then sear for about 3 minutes on each side until golden brown. Remove from the skillet and let it rest.
  2. In a pot, boil salted water and cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  3. In the same skillet, add the remaining olive oil and sauté minced garlic for about 1 minute until fragrant. Add cherry tomatoes and spinach; cook until softened.
  4. Slice the rested steak and return it to the skillet along with drained pasta. Pour in reserved pasta water and stir in grated Parmesan cheese until creamy.
  5. Serve hot, garnished with additional Parmesan if desired.
