  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 eggs (beaten)
  • 2 tbsp ketchup
  • 1 tsp sriracha sauce
  • 1 tsp garlic powder

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add diced bell peppers and frozen peas; stir-fry for 3-4 minutes until slightly softened.
  3. Stir in pineapple chunks and sauté for an additional 2 minutes.
  4. Add cooked rice, breaking up clumps; stir-fry for about 3-5 minutes until heated through.
  5. Drizzle soy sauce, ketchup, garlic powder, and sriracha over the mixture; toss well.
  6. Push rice to one side of the pan, scramble beaten eggs on the other side until fully cooked, then mix into the rice.
