  • 2 tbsp Fresh Rosemary, chopped
  • 2 tbsp Fresh Thyme, chopped
  • 2 tbsp Fresh Parsley, chopped
  • 8 cloves Garlic, minced
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Dijon Mustard

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a bowl, combine rosemary, thyme, parsley, garlic, olive oil, salt, pepper, and Dijon mustard to form a paste.
  3. Pat the prime rib dry and rub the herb mixture all over the roast.
  4. Place the roast in a roasting pan bone-side down and sear for 20 minutes.
  5. Lower the oven temperature to 325°F (160°C) and roast until the internal temperature reaches 130°F (54°C) for medium-rare.
  6. Let it rest covered loosely with foil for 20-30 minutes before slicing.
