Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1/2 cup hot honey
  • 1/4 cup low-sodium soy sauce
  • 2 bell peppers, diced (any colors)
  • 2 green onions, sliced
  • 2 cups cooked rice or quinoa

Instructions

  1. Pat chicken breasts dry and season with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat; cook chicken for 6-7 minutes per side until golden brown and reaches an internal temperature of 165°F. Remove from skillet and let rest.
  3. In the same skillet, sauté diced bell peppers for 3-4 minutes until softened.
  4. Add minced garlic; cook for about 30 seconds until fragrant. Stir in hot honey and soy sauce to create a glaze.
  5. Slice rested chicken and return to the skillet; toss to coat in the glaze.
  6. Serve over cooked rice or quinoa, garnished with green onions.
