- 1 packet taco seasoning
- 4 cups tortilla chips
- 2 cups shredded cheese (cheddar and Monterey Jack mix)
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 cup cherry tomatoes, diced
- 1 avocado, sliced
Instructions
- Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking dish with nonstick spray.
- In a skillet over medium heat, brown the ground beef; drain fat if necessary. Add taco seasoning and mix well.
- Layer half of the tortilla chips in the baking dish. Top with half of the beef mixture, half of the black beans, and one layer of shredded cheese.
- Repeat layers with remaining tortilla chips, beef, beans, and finish with cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Allow to cool slightly; garnish with avocado, tomatoes, cilantro, and sour cream before serving.
