  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 4 cups tortilla chips
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 cup cherry tomatoes, diced
  • 1 avocado, sliced

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13-inch baking dish with nonstick spray.
  2. In a skillet over medium heat, brown the ground beef; drain fat if necessary. Add taco seasoning and mix well.
  3. Layer half of the tortilla chips in the baking dish. Top with half of the beef mixture, half of the black beans, and one layer of shredded cheese.
  4. Repeat layers with remaining tortilla chips, beef, beans, and finish with cheese.
  5. Bake for 25-30 minutes until bubbly and golden.
  6. Allow to cool slightly; garnish with avocado, tomatoes, cilantro, and sour cream before serving.
