  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fettuccine
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • 1 cup bell peppers (sliced, mixed colors)
  • 3 cloves garlic (minced)
  • 1 cup freshly grated Parmesan cheese
  • 2 green onions (chopped)

Instructions

  1. Season chicken breasts generously with Cajun seasoning. Heat oil in a large skillet over medium-high heat and sear chicken until golden brown, about 6-7 minutes per side. Remove and set aside.
  2. In boiling salted water, cook fettuccine according to package instructions until al dente. Reserve some pasta water before draining.
  3. In the same skillet, sauté sliced bell peppers and minced garlic for 3-4 minutes until softened.
  4. Lower the heat and add heavy cream and reserved pasta water gradually to achieve desired sauce consistency. Stir in grated Parmesan until melted and smooth.
  5. Slice the cooked chicken, add it back to the skillet with drained fettuccine, and toss gently to coat in the sauce.
  6. Garnish with chopped green onions before serving hot.
