  • 9 corn tortillas (or flour if preferred)
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet, sauté onion and garlic until translucent, about 5 minutes.
  3. Add ground beef, cumin, and chili powder; cook until browned.
  4. Stir in black beans and salsa; simmer for 5 minutes.
  5. Layer tortillas in the baking dish, followed by meat mixture and cheese. Repeat layers until all ingredients are used.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly.
