  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 cup bell peppers, diced (mixed colors)
  • 1 cup sour cream (or Greek yogurt)
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 2 cups crushed tortilla chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a skillet, brown the ground beef over medium heat; stir in taco seasoning until fragrant.
  3. Layer half of the crushed tortilla chips in the baking dish, followed by half of the cooked beef mixture.
  4. Add black beans, corn, and diced bell peppers on top.
  5. Spread sour cream over the veggies and sprinkle with shredded cheese.
  6. Repeat layers using remaining ingredients, finishing with cheese on top.
  7. Bake uncovered for 25-30 minutes until bubbly and golden brown.
