  • 2 cups Granny Smith apples, peeled and chopped
  • 1 cup Gala apples, peeled and chopped
  • 2 tsp cinnamon
  • 1/2 cup light brown sugar
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter, melted (for topping)
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and line a muffin tin with parchment paper.
  2. Roll out your pie crust to about 1/8 inch thick and cut circles to fit the muffin tin.
  3. In a bowl, combine the chopped apples, brown sugar, lemon juice, and cinnamon; mix well.
  4. Place each dough circle into muffin cups and fill generously with the apple mixture.
  5. Fold excess dough over or create tops from leftover dough; brush each with egg wash.
  6. Bake for 25-30 minutes until golden brown and bubbly.
