Ingredients

  • 2 salmon fillets (6 oz each)
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp lemon juice (fresh)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Season salmon fillets with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Place salmon skin-side down and sear for about 4 minutes until golden brown. Flip and cook for another 4 minutes until cooked through. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 1 minute). Add spinach and cook until wilted (around 2 minutes).
  4. Lower heat and stir in heavy cream and Parmesan cheese until melted. Add lemon juice and mix well.
  5. Return the salmon to the skillet, spoon sauce over it, and simmer on low heat for an additional 2 minutes.
  6. Serve warm, garnished with additional lemon or herbs as desired.
