Instructions

  1. Preheat oven to 200°F (93°C) and line two baking sheets with parchment paper.
  2. Whip egg whites in a clean bowl until frothy. Add cream of tartar and beat until soft peaks form.
  3. Gradually add granulated sugar while mixing on high speed until glossy stiff peaks form.
  4. Fold in vanilla and peppermint extracts gently, adding food coloring if desired.
  5. Transfer meringue to a piping bag and pipe small dollops onto lined baking sheets.
  6. Bake for about 90 minutes until dry and crisp; turn off the oven and leave meringues inside to cool completely.
  7. Melt chocolate according to package instructions, dip meringue pops halfway, let excess drip off, then sprinkle with decorations if desired.
