Instructions

  4. Gradually fold the dry mixture into the banana-pumpkin blend until just combined.
  5. Add eggs and oil (or melted butter) to the batter; stir gently without overmixing.
  6. Scoop the batter into prepared muffin tins, filling each cup about three-quarters full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean. Allow cooling in the pan for five minutes before transferring to a wire rack.
