  • 2 large eggs (room temperature)
  • 1 cup pumpkin puree (canned or homemade)
  • ⅓ cup vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs, pumpkin puree, and oil until smooth.
  4. Gently fold dry ingredients into the wet mixture until just combined.
  5. Spoon half of the batter into each muffin cup. Add a dollop of additional pumpkin puree on top before adding remaining batter and gently swirl with a toothpick.
  6. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean. Let cool in the pan for five minutes before transferring to wire racks.
