  • 2 cups mixed cremini and shiitake mushrooms, sliced
  • 2 cups low-sodium vegetable broth
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, warm olive oil. Sauté onions and garlic until soft, about 5 minutes.
  3. Add mushrooms; cook until golden brown, about 7-10 minutes.
  4. Stir in rinsed barley and vegetable broth. Bring to a boil, then simmer covered for 30 minutes until barley is tender.
  5. Mix in thyme, salt, pepper, and half the cheese. Transfer to the baking dish, top with remaining cheese.
  6. Bake uncovered for 20 minutes until golden and bubbly.
