Instructions

  1. Sear the beef chuck roast in a skillet over medium-high heat until browned on all sides (about 4-5 minutes).
  2. In the same skillet, sauté the diced onions and minced garlic until fragrant (about 2-3 minutes). Transfer to the slow cooker.
  3. Add chopped carrots and cubed potatoes to the slow cooker.
  4. In a bowl, whisk together beef broth, Worcestershire sauce, thyme, bay leaves, salt, and pepper. Pour over the meat and vegetables.
  5. Cover and cook on low for 8 hours or high for 4 hours until meat is tender.
  6. Remove the beef; mix cornstarch with water until smooth and stir into the gravy in the slow cooker. Heat on high for about 15 minutes to thicken.
