- 4 nori sheets, cut into squares
- 1 ripe avocado, sliced
- 2 tablespoons toasted sesame seeds
- 2 green onions, finely chopped
- 1 cucumber, thinly sliced
Instructions
- Rinse sushi rice under cold water until clear. Cook with water in a pot; bring to boil, reduce heat, cover, and simmer for 18 minutes.
- Mix rice vinegar, sugar, and salt in a bowl until dissolved. Fold into cooked rice while fanning to cool.
- In a bowl, combine diced salmon with sriracha and chopped green onions.
- Preheat oven to 350°F (175°C). Press nori squares into muffin tins and bake for about 5 minutes until crispy.
- Fill cooled nori cups with sushi rice, top with salmon mixture and avocado slices.
- Garnish with sesame seeds and cucumber before serving.
