  • 1 cup sushi rice
  • 1 ¼ cups water
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • Pinch of salt
  • 8 ounces sashimi-grade salmon, diced
  • 12 tablespoons sriracha sauce (to taste)
  • 4 nori sheets, cut into squares
  • 1 ripe avocado, sliced
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, finely chopped
  • 1 cucumber, thinly sliced

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with water in a pot; bring to boil, reduce heat, cover, and simmer for 18 minutes.
  2. Mix rice vinegar, sugar, and salt in a bowl until dissolved. Fold into cooked rice while fanning to cool.
  3. In a bowl, combine diced salmon with sriracha and chopped green onions.
  4. Preheat oven to 350°F (175°C). Press nori squares into muffin tins and bake for about 5 minutes until crispy.
  5. Fill cooled nori cups with sushi rice, top with salmon mixture and avocado slices.
  6. Garnish with sesame seeds and cucumber before serving.
