Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 cup sour cream
  • 3 large eggs
  • ¼ cup unsweetened cocoa powder

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, combine graham cracker crumbs and melted butter until damp. Press into the bottom of a springform pan.
  2. Bake crust for 10 minutes until lightly golden. Allow to cool slightly.
  3. In another bowl, blend softened cream cheese until smooth; gradually mix in sugar until combined.
  4. Add vanilla extract and sour cream; mix well. Incorporate eggs one at a time without overmixing.
  5. Pour the cheesecake mixture into the cooled crust and smooth the top.
  6. Combine cocoa powder with a small portion of batter and drizzle over the cheesecake in concentric circles. Swirl with a toothpick to create the spiderweb effect.
  7. Bake for approximately 60 minutes or until edges are firm but center is slightly jiggly.
  8. Cool at room temperature before refrigerating for at least 4 hours (preferably overnight).
