  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 cloves garlic, minced
  • 1 cup vegetable broth (low-sodium)
  • 3 cups mashed potatoes (prepared)
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 4 tbsp butter (for mashed potatoes)
  • ¼ cup milk (for mashed potatoes)

Instructions

  1. In a large skillet over medium heat, brown the ground lamb or beef until no pink remains.
  2. Add the diced onion and minced garlic; sauté until onions are translucent.
  3. Stir in the diced carrots, peas, and corn; cook for about 5 minutes until slightly softened.
  4. Pour in vegetable broth and add thyme and rosemary; simmer for about 10 minutes until thickened.
  5. While simmering, boil peeled potatoes until tender. Mash with butter and milk; season to taste.
  6. In an oven-safe dish, layer the meat mixture at the bottom and spread the mashed potatoes on top.
  7. Preheat oven to 400°F (200°C) and bake uncovered for 25-30 minutes until golden brown.
