  • 1/2 cup sweet chili sauce
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tsp sesame oil
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together sweet chili sauce, garlic, ginger, soy sauce, lime juice, and sesame oil.
  3. Marinate the pork in half of the marinade for at least 30 minutes.
  4. Sear the marinated pork in a skillet over medium-high heat for about 3-4 minutes on each side until golden brown.
  5. Transfer to a baking dish, pour remaining marinade over it, and bake for 20-25 minutes or until internal temperature reaches 145°F (63°C).
  6. Let rest for 5-10 minutes before slicing and serving warm.
