  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar

  • 1 cup heavy cream, whipped to stiff peaks
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries

Instructions

  1. Create the crust by mixing graham cracker crumbs and melted butter until combined. Press firmly into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat softened cream cheese with granulated sugar and vanilla extract until smooth (3-5 minutes).
  3. Gently fold in whipped heavy cream until just combined.
  4. Pour half of the cheesecake filling onto the crust; layer with half of the strawberries and blueberries.
  5. Add remaining filling on top, followed by more strawberries and blueberries.
  6. Cover with plastic wrap and refrigerate for at least 4 hours or overnight before serving.
