Instructions

  1. Trim the base and fronds from the fennel bulb; slice thinly using a sharp knife or mandoline.
  2. Remove both ends of each orange, then slice down the sides to peel. Segment the oranges by cutting out the segments without pith.
  3. Thinly slice the red onion and add it to a large mixing bowl with fennel and orange segments.
  4. Drizzle olive oil over the mixture; season with salt and pepper. Toss gently to combine.
  5. Garnish with fresh parsley before serving.
