Description

Ingredients

  • 2 ripe mangoes
  • 1 English cucumber
  • 1 red bell pepper
  • 1 small red onion
  • Fresh cilantro
  • Juice of 2 limes

Instructions

  1. Wash all produce thoroughly. Peel and dice mangoes into bite-sized pieces.
  2. Chop cucumber and red bell pepper into small cubes.
  3. Finely chop cilantro (or parsley) and mix with the diced ingredients in a bowl.
  4. Squeeze fresh lime juice over the mixture, adding salt and pepper to taste.
  5. Gently toss everything until well combined, then serve immediately.
