  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup plain whole milk Greek yogurt
  • 1 medium cucumber, grated
  • 2 tbsp fresh dill, chopped
  • 2 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 cup cherry tomatoes, halved
  • Β½ small red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a pan over medium heat. Cook chicken for 6-7 minutes on each side until golden brown and fully cooked.
  2. For the tzatziki sauce, mix Greek yogurt, grated cucumber (squeezed to remove excess moisture), minced garlic, lemon juice, chopped dill, salt, and pepper in a bowl until smooth.
  3. Dice cherry tomatoes and slice red onion thinly.
  4. In a large bowl, combine sliced chicken, tzatziki sauce, diced veggies, and drizzle with olive oil. Toss gently until well combined.
  5. Serve on a bed of lettuce or enjoy as is; garnish with extra dill if desired.
