- 1 cup fresh strawberries, hulled
- 1 cup full-fat coconut milk
- 1 cup blueberries
- 2 tbsp honey or maple syrup (adjust to taste)
- 1/2 cup water (divided)
Instructions
- Wash and prepare the strawberries and blueberries.
- In a blender, blend strawberries with 1/4 cup water and 1 tbsp honey until smooth for the red layer.
- Blend coconut milk with remaining honey until well mixed for the white layer.
- Blend blueberries with 1/4 cup water until smooth for the blue layer.
- Pour strawberry mixture into popsicle molds and freeze for about 30 minutes.
- Add the coconut layer on top and freeze for another hour.
- Finally, pour in the blueberry mixture and insert sticks; freeze for at least 4 hours or until solid.
- To release popsicles, run warm water over the outside of the molds.
