  • 2 cups fresh corn kernels (about 2 ears)
  • 1/2 cup red onion, thinly sliced

  • 1/2 cup crumbled feta cheese
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
