  • 1 cup orange segments
  • 1 cup grapefruit segments
  • ½ red onion (thinly sliced)
  • 1 cup shredded carrots
  • 2 tbsp fresh ginger (grated)
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt & pepper to taste

Instructions

  1. Thoroughly wash the mixed greens and spin dry in a salad spinner.
  2. Slice the oranges and grapefruits into segments, avoiding any pith.
  3. Add thinly sliced red onion and shredded carrots to the greens.
  4. In a small bowl, whisk together olive oil, grated ginger, honey, lemon juice, salt, and pepper until well combined.
  5. Toss the prepared greens with the citrus segments and veggies in a large bowl. Drizzle the dressing over the top and toss gently.
  6. Serve immediately for optimal freshness.
