  • 1 cup fresh bread crumbs
  • 1 medium onion, finely chopped
  • 4 tbsp unsalted butter, divided
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tsp salt (to taste)
  • ½ tsp black pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Sauté the chopped onion until translucent (about 5 minutes). Add diced pears and chestnuts; cook until slightly softened.
  3. Stir in fresh herbs, breadcrumbs, salt, and pepper. Gradually add chicken broth until the stuffing is moist but not soggy.
  4. Stuff each Cornish game hen generously with the mixture and tie the legs with kitchen twine if desired. Rub the outside of each hen with the remaining butter and season with salt and pepper.
