  • 2 large Yukon Gold potatoes (about 12 oz)
  • 2 tbsp olive oil

  • 1 clove garlic (minced)
  • 1 tbsp fresh parsley (chopped)

Instructions

  1. Season both sides of the ribeye steak generously with salt and pepper. Let it rest at room temperature.
  2. Heat a cast-iron skillet over medium-high heat until hot. Add olive oil and sear the steak for about 4 minutes on each side until a crust forms. Remove from heat and let it rest.
  3. Peel and cut Yukon Gold potatoes into thick strips. In another pan, heat olive oil over medium heat, then fry potato strips in batches until golden brown (about 6-8 minutes). Drain on paper towels and season with salt.
  4. For the garlic butter sauce, mix softened butter with minced garlic and chopped parsley.
  5. Slice the rested ribeye against the grain and serve alongside crispy fries, drizzled or served with garlic butter.
