Ingredients

Scale
  • 1 lb lean ground beef
  • 6 oz thick-cut bacon
  • 1 cup long-grain white rice
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • ¼ cup ketchup
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pan.
  2. Sauté the chopped onion in the bacon fat until translucent and aromatic. Add minced garlic and sauté for another 30 seconds.
  3. Add the ground beef to the skillet and cook until browned. Season with salt and pepper.
  4. Stir in the rice until coated with the mixture. Pour in beef broth, ketchup, and Dijon mustard; bring to a boil.
  5. Reduce heat, cover, and simmer for about 20 minutes or until rice is tender and has absorbed liquid.
  6. Sprinkle cheese on top, cover until melted, then crumble reserved bacon over before serving.
