  • 4 medium ripe tomatoes, chopped (about 2 cups)
  • 1 large bell pepper, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 large eggs
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 4 slices sourdough bread
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions until translucent.
  2. Add bell peppers and garlic; cook until fragrant.
  3. Stir in tomatoes, cumin, paprika, salt, and pepper. Simmer for about 10 minutes until thickened.
  4. Create wells in the sauce and crack an egg into each well. Cover the skillet and poach eggs until whites are set (about 6 minutes).
  5. Meanwhile, toast the sourdough bread until golden brown.
  6. Serve the shakshouka over toasted bread and garnish with fresh herbs if desired.
