  • 3 boneless, skinless chicken breasts (1 lb), diced
  • 2 cups jasmine or basmati rice
  • 1 cup green beans, trimmed
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 tbsp toasted sesame seeds

Instructions

  1. Rinse the rice under cold water until clear. Combine with 2 cups water in a pot; bring to a boil. Cover tightly and simmer on low for 15 minutes.
  2. While rice cooks, heat sesame oil in a large skillet over medium-high heat. Add the diced chicken, seasoning with salt and pepper. Cook until golden and fully cooked (6-8 minutes).
  3. In the last minute of cooking chicken, add minced garlic and sauté until fragrant. Then add green beans; cook until bright green yet crisp (about 3-4 minutes).
  4. For the sauce, whisk together soy sauce, brown sugar, and cornstarch mixture. Pour into the skillet while stirring until thickened (2-3 minutes).
  5. Serve immediately over fluffy rice, garnished with toasted sesame seeds.
