- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados
- 8 sheets phyllo dough
- 2 tbsp lime juice
- 1 tsp chili powder
- ¼ cup fresh cilantro, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly brush phyllo sheets with olive oil and cut into squares.
- Place squares into muffin tins to form cups. Bake for about 10 minutes until golden brown.
- In a skillet over medium heat, sauté shrimp seasoned with salt, pepper, and chili powder until pink and opaque.
- In a bowl, mash avocados with lime juice, cilantro, salt, and pepper until smooth.
- Once shrimp cool slightly, chop into bite-sized pieces and fold into the avocado mixture.
- Fill each phyllo cup with the shrimp-avocado mixture and garnish with additional cilantro before serving.
