  • 1 whole chicken (45 pounds)
  • 2 large lemons (zested and juiced)
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 garlic cloves, minced
  • ¼ cup extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry.
  3. In a bowl, mix olive oil, lemon juice, garlic, herbs, salt, and pepper.
  4. Rub the marinade all over the chicken, including under the skin.
  5. Stuff the cavity with lemon halves and extra herbs.
  6. Place chicken breast-side up in a roasting pan and roast for 1 hour 15 minutes or until internal temperature reaches 165°F (75°C).
  7. Let rest for 10 minutes before carving.
