- 1 lb lean ground beef
- 8 corn tortillas
- 2 cups shredded cheddar and Monterey Jack cheese
- 2 cups enchilada sauce (store-bought)
- 1 medium sweet onion, diced
- 3 cloves garlic, minced
- 2 tsp ground cumin
- ¼ cup fresh cilantro, chopped
- Sour cream (optional for serving)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, add oil and sauté the diced onion until translucent (about 5 minutes). Stir in minced garlic until fragrant.
- Add the ground beef, cumin, and salt; cook until browned. Stir in half of the enchilada sauce and simmer for about 5 minutes.
- Place a spoonful of the beef mixture in each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with cheese. Bake for 20-25 minutes until bubbly.
