  • 1 lb lean ground beef
  • 8 corn tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 2 cups enchilada sauce (store-bought)
  • 1 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • ¼ cup fresh cilantro, chopped
  • Sour cream (optional for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, add oil and sauté the diced onion until translucent (about 5 minutes). Stir in minced garlic until fragrant.
  3. Add the ground beef, cumin, and salt; cook until browned. Stir in half of the enchilada sauce and simmer for about 5 minutes.
  4. Place a spoonful of the beef mixture in each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour remaining enchilada sauce over the top and sprinkle with cheese. Bake for 20-25 minutes until bubbly.
