  • 1 pound thinly sliced ribeye steak
  • 1 large sweet onion (Vidalia or yellow), sliced
  • 1 cup mixed bell peppers (red and green), sliced
  • 6 ounces provolone cheese, sliced
  • 4 crusty hoagie rolls
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, add olive oil. Once shimmering, toss in the sliced onions and bell peppers. Sauté until tender and golden brown (about 5-7 minutes).
  2. Push the vegetables to one side of the skillet. Add the ribeye steak, season with salt and pepper, and cook until browned (about 3-5 minutes), stirring occasionally.
  3. Mix the steak with the vegetables, then layer provolone cheese on top. Cover with a lid to melt (about 2-3 minutes).
  4. While waiting for the cheese to melt, slice hoagie rolls lengthwise without cutting all the way through. Optionally warm them in another pan or oven.
