  • 1 can (14.5 oz) diced tomatoes in juice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with olive oil.
  2. In a skillet over medium heat, sauté diced onion and bell pepper in olive oil until softened (about 5 minutes).
  3. Add minced garlic and cook until fragrant (about 1 minute).
  4. Stir in the black beans, pinto beans, kidney beans, and diced tomatoes until well combined.
  5. Add cumin and chili powder; mix thoroughly and let simmer on low heat for about 5 minutes.
  6. Transfer the mixture to the prepared baking dish and top with shredded cheddar cheese.
  7. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden brown.
