- 1 bell pepper, chopped
- 2 tsp cumin
- 2 tsp chili powder
- 2 tbsp olive oil
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with olive oil.
- In a skillet over medium heat, sauté diced onion and bell pepper in olive oil until softened (about 5 minutes).
- Add minced garlic and cook until fragrant (about 1 minute).
- Stir in the black beans, pinto beans, kidney beans, and diced tomatoes until well combined.
- Add cumin and chili powder; mix thoroughly and let simmer on low heat for about 5 minutes.
- Transfer the mixture to the prepared baking dish and top with shredded cheddar cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly and golden brown.
