  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin powder
  • 1/2 tsp chili powder

Instructions

  1. In a bowl, whisk together lime juice, garlic, cilantro, olive oil, cumin, chili powder, salt, and pepper until combined.
  2. Place chicken thighs in a resealable bag or shallow dish and pour marinade over them. Seal or cover and refrigerate for at least one hour (or overnight for best results).
  3. Preheat grill to medium-high heat (375°F) or oven to 425°F.
  4. Remove chicken from marinade (reserve marinade) and place on the grill or in an oven-safe pan skin-side down. Cook for about 7-10 minutes until charred or golden brown.
  5. Flip chicken if grilling; bake without flipping if using the oven. Cook until internal temperature reaches 165°F (approximately another 15-20 minutes).
  6. Brush reserved marinade over the chicken in the last few minutes of cooking for added flavor.
  7. Let chicken rest for five minutes before serving.
