  • 1 cup fresh corn (or frozen)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • Β½ medium red onion, thinly sliced
  • 1 ripe avocado, diced
  • Juice of 2 limes
  • ΒΌ cup fresh cilantro, chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • Β½ cup plain Greek yogurt
  • 2 tbsp extra virgin olive oil

Instructions

  1. Season chicken with cumin and chili powder. Grill over medium heat for about 6–7 minutes per side until cooked through.
  2. Let chicken rest for five minutes before chopping into bite-sized pieces.
  3. In a large bowl, combine chopped cherry tomatoes, red onion, avocado, and cilantro.
  4. Add black beans and corn to the veggie mix; toss gently.
  5. In a small bowl, whisk together Greek yogurt, lime juice, and olive oil until smooth.
  6. Fold in chopped chicken with the veggie mixture; drizzle dressing over salad and mix gently.
  7. Serve immediately or chill for later.
