  • 2 tbsp Kosher Salt
  • 2 tsp Fresh Black Pepper
  • 4 Garlic Cloves, minced
  • 2 tbsp Fresh Rosemary, chopped
  • 2 tbsp Fresh Thyme, chopped
  • 3 tbsp Olive Oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pat the prime rib dry with paper towels and season generously with kosher salt and black pepper.
  3. In a bowl, mix minced garlic, rosemary, thyme, and olive oil into a paste.
  4. Rub the herb mixture evenly over the entire roast.
  5. Place the roast bone-side down in a roasting pan and roast at 450°F for 20 minutes.
  6. Reduce temperature to 325°F (163°C) without opening the oven door; continue roasting until internal temperature reaches 130°F (54°C) for medium-rare.
  7. Remove from oven and let rest for 20-30 minutes before slicing against the grain.
